muesli love

You know it's a good day, when you can start it off with a hearty bowl of muesli. :) It's something that, for me at least, requires time and patience to savour. Sounds strange, I know, since it's probably a dish that most people view as a quick/on-the-go type of breakfast. But on working days, sleep (even a luxurious mere 2 minutes more) trumps breakfast anytime. Since I had some leftover thawed berries (from the almost vegan triple berries cheesecake attempt) and a glorious Sunday morning ahead of me, I was able to put together muesli with Silk soy milk (soooo good) and leftover berries.

This week has been so tiring. But I'm so relieved that the weekend is almost upon us!! Hang in there.

The Kitchen Table Cafe and Bake

Finally, a Sunday of rest to look forward to tomorrow. :) I'm so grateful whenever there is a day off in the week. It just makes all the difference - that ONE day of rest. Not that it's enough (in the ideal world we'd all be working 3 days a week and resting the next 4 ;p) but the days are so much more manageable with that one day to break the tedium and drudgery. That said, I do miss brunch. 

One of the best parts of my NZ trip was checking out all these great cafes where we would sloth around, eat great food and plan our next destination. In general, traveling for food was something we all agreed on. The NZ trip was about the time when I was starting to make a change in my diet though - sort of the start of my attempts at eliminating meat from my diet. Yeshhh, it's been about 5 months now since I've started my pescatarian ways, since I've not been able to cut out seafood/eggs/dairy from my diet to become completely vegetarian. ;p Maybe it'll be the next step. But anyhow, I realized pretty quickly that a grad trip with friends is not the ideal time for a change of that scale. At first I persisted, but then in the end I realized it would be much harder for our resident chef to cater for 4 minced meat and melted cheese mushrooms + 1 muesli dish for breakfast... Still, NZ was probably the time when I started to really develop a liking for muesli. I love how it's simple, hearty and downright healthy most of the time. 

Here's a cafe we happened to pass by - The Kitchen Table Cafe and Bake, in Dunedin, NZ. I just remember it being a very cozy place with really yummy muesli that came in a ginormous serving size. MMFF.

Nothing quite as satisfying as smoked salmon with poached eggs and hollandaise sauce. I don't know how I'm ever going to be able to turn vegetarian because I can't quite foresee life without those flavours. GAH.

The gorgeous bowl of muesli with a great variety of nuts strewn in. I love the combination of milk and a berry compote as well with muesli.  


 photo kitchencafe5small_zps16573504.jpg LOL. My friend's bagel as it was the cheapest thing on the menu. Quite a decently sized one though. (And wouldn't you agree that toasted bread/dough is just about the best taste on earth? With butter that is.)

And of course, the other place we had to visit was the Dunedin Railway Station - apparently THE most photographed site in the whole of NZ.

Heh. I really don't remember us doing very much apart from walking around the town centre, called The Octagon, really quickly. It's a quiet, chill sort of place and the best find was probably that cafe - amazingly, because it was while we were in search of another one that we never found. I like drawing meaning and conclusions from instances such as this. Conclusions such as, 'expect the unexpected' or 'you might not find what you're looking for, but in the process, something better might settle right in front of you'. Obviously I ain't gonna be writer of fortune cookie prophecies any time soon.

Lake Matheson Cafe



SO HAPPY to have finished work early today. And by early, I mean getting home before 7pm. This 2 weeks since coming back from Montreal has been HARSH. I guess it's always going to be rough returning back to work/reality after a holiday but these 2 weeks were plain tiring. After an epic-ly hideous call, I ignored my body's screams/pleas for sleep and went out instead for dinner with a bestie whom I hadn't caught up with in ages. After that, the viral flu set in. Plain miserable to be sick. But then you realize that the body really can be a lot smarter than the brain. There's probably still a huge sleep debt that needs to be paid off but for now, I feel happy and energized enough to look through more NZ photos. :)

One of my favorite places that we went to in NZ was Lake Matheson Cake. This was near Fox Glacier where we did a SICK morning of ice climbing (never again! I was that close to keeling over. NEVERRRR AGAIN). We'd read in Lonely Planet that this cafe was a great place to head to for breakfast followed by a walk by the lake but due to drizzly weather and foggy skies, we ended up only making it for breakfast and not the lake. :p Didn't bother us much though. The beautiful cafe was more than enough eye candy and we were some of the only customers there. What a feeling to be in such a place of beauty with SO FEW PEOPLE AROUND after being so used to negotiating jam-packed crowds in any cafe remotely promising the potential of quiet space.

Just fell in love with the floor to ceiling glass windows and the clean lines of these wooden chairs and tables.

MMMM MUESLI! This was SO GOOD. I think this was the time when I fell in love with muesli and yoghurt drizzled with honey. It's such a simple thing to whip up for breakfast and really fills the tummy but I suppose it's something I would only do on a holiday or if I were on leave. You just need to have the patience and the mood for a slow, leisurely breakfast in order to truly enjoy something like this. On a daily basis, sleep > breakfast anytime.

I would gladly pay for a holiday and go overseas if only to bury myself in an oasis of tranquility. Some people prefer getting out and bonding with nature but for me, I just like a quiet cafe with good food, good company and a good view.

Home-Cooked: Whole Wheat Pancakes

This is starting to become a little more of a food blog than anything else. :P But what can I say - nowadays the main highlights of my week happen to be the weekends when I get to bake/cook and leisurely/lovingly take some photos. This next two weeks is meant to be revision weeks for me but that also means (I hope!) a slightly more flexible schedule. First thing I did was plan out a bunch of meals that I want to make for myself from breakfasts/lunches/dinners to desserts. And since Friday was a public holiday, it was the perfect day to get started. :)) What better way to start off the day than with home-made pancakes? And since I've got a little health-conscious streak in me (I do! I really do!!), I decided to try making whole wheat ones at that.

This was my first time making pancakes and boy, it was NOT AS EASY as I'd envisioned! The main problem I had was flipping the pancakes. I'd totally forgotten about this step. But when faced with the bubbling pancake batter on the pan all those American diner scenes in movies that I'd watched before came rushing back into my mind and that's when I realized - oh yeah, this is the part when I give a fanciful flick of the wrist and send the pancake soaring into the air to land perfectly back on the pan on the opposite side. And next thing of course was the thought - DANG. I had to flip them with the spatula which was not easy either! They kept folding over in half instead of flipping right over entirely. After this experience, I've come to realize this fact of life:

The key to making pretty pancakes is to make SMALL ones using the biggest spatula you've got. >:)

Agreed? It's pretty common sense right? But took me my first batch of large wobbly pancakes to realize that.

To tell you the truth, though the smaller pancakes look prettier to me, I still prefer the large ones. More traditional. And there's nothing like needing to use a knife to cut out sections of a huge pancake to slowly chew on and savor.

Whole Wheat Pancakes 

(Recipe adapted from Joy the Baker and Skinny Taste) (yeahhh I tried to make it a little more healthy ;p)
Ingredients:

-2 eggs
-1 cup of whole wheat flour
-1 cup of plain/all-purpose flour
-2 tablespoons sugar
-2 teaspoons baking powder
-1 teaspoon baking soda
-1 teaspoon salt
-2 cups buttermilk
-4 tablespoons butter, melted and cooled
-½ teaspoon vanilla extract
-Oil or cooking spray (for cooking)
(I think I need to get myself some cooking spray. It's not ideal trying to wipe bits of butter onto the frying pan each time. But I didn't feel like using cooking oil since I thought it might mess a bit with the taste.)

#1: In a large bowl beat eggs. Add buttermilk, butter and vanilla and mix well. Then add your two types of flour, sugar, baking powder, baking soda, and salt. Mix well until mostly smooth.

#2: Heat griddle or pan over medium heat. Add a teaspoon of oil to the pan or spray with cooking spray.


#3: Use a ladle to pour out batter onto the griddle. You can use 2 tablespoons or if you'd like really small ones like the ones I made the second time round, I sort of used only 1 tablespoon of batter each time.


#4: Cook on the first side until bubbles form across the surface and start to pop. Check occasionally to make sure the bottom is not overcooking by gently lifting up the sides. It also helps to loosen the pancake for the flipping part. Flip the pancake over with a spatula and cook until golden brown.


This batter makes quite a lot of pancakes! I'd say if you've only got 2-3 people with Asian appetites ;p it's better to halve the batter. If you have unfinished batter just keep it refrigerated for the next day.

For the blueberry syrup, I decided to make use of the maple syrup that I'd brought back all the way from Montreal those months ago. Finally! I've been meaning to check out maple syrup recipes but never quite got around to doing so. This was the perfect opportunity.

Blueberry-Maple Syrup

Ingredients:
-1 cup of blueberries
-1/2 cup of Maple Syrup
-1 tsp of cornstarch
-1 tsp of lemon juice

 #1: In small saucepan, bring blueberries and maple syrup to boil. Reduce heat and simmer until berries break up, about 5 minutes.

: Stir in the lemon juice and corn starch to let it thicken slightly.
And you're done! :)

Kinda happy with the way these turned out. :) Seriously, whenever something I cook/bake turns out edible I'm still pleasantly surprised deep down inside. Cheap thrill, I know, but I like feeling happy about the stuff I cook! I'm thinking of trying out waffles next...Or what else is a typical breakfast/brunch dish?

short, easy words like "what about lunch?"

Hello, most-perfect-7-layered-pancake-I've-come-across-in-my-life-that-comes-complete-with-a-generous-mound-of-all-my-favorite-berries. :)

Ohhhh yeah. Doesn't that look insanely good? IT WAS. This was actually taken agesss ago when my friends and I (we've labelled ourselves The Brunch Club which sounds rather affectionate eh? But it's really just to mask our true colours -- that we're all just a bunch of gluttons who can't get up before 11am on a weekend!) decided to venture out to this fantastic restaurant called Barracks @ Dempsey (so named because apparently it used to be British military barracks; not that you would be able to tell from looking, because it's been renovated so well) for brunch one sunny Saturday morning. The dish in the above picture is the 7 layer Pancake,which, if you haven't already gotten the cravings for, will bring you down to your knees based on sheer looks alone. Coupled with the very generous helpings of blueberries/strawberries/pistachios/apricots/raisins jammed pack in between the layers of soft, fluffy pancakes, it's PURE BLISS I tell you, PURE BLISS. :) Probably the best pancakes I've eaten...ever. And really because I just love the combination of pancakes with summer berries. It's also probably the one thing I might be able to try making for myself one day since it's just a matter of getting the ingredients and artfully displaying them on a plate with homemade pancakes...BUT, I'm not really going to try that anytime soon because once I start making them at home, it means I have the ability to prepare AND eat all that pretty much every weekend...or every day for that matter if I give in to my cravings. So it's good to save some things for outside dining.

(Oh, but I guess an actual 7 layered pancake would be too good to be true. ;p Incase you haven't noticed, it's really only 1/4 of 7 layers. HMMPH.)

Eggs benedict! :) I'd love to learn to cook these one day. But after watching that scene in Julie & Julia in which she uses up about a dozen eggs... Not quite on my priority list of things to do.

The Oregon Salmon Hash was a real winner! Warm, hearty mixture of salmon chunks, potatoes, chives, sour cream... all in perfect proportions of course. I remember really liking this and licking it clean to the base.

Squid ink pizza. I know it's supposed to be one of the dishes the Skinny Pizza franchise is famous for but I'm more of a traditional, good ol' plain crust pizza kinda gal. What you see on your plate definitely plays a huge role in how you make sense of it and appreciate its flavors. (i.e, looking down at my slice of blackened crust pizza, I had a hard time reminding myself that I wasn't eating some form of hardened ash. ;p True story.)

Calzones always look better than they taste, in my opinion. I just like how they look like GIANT curry puffs. :D

Now on to the desserts!

Rumbaba rum-baba...cha-cha-cha! That name just sounds awfully catchy doesn't it? I'm not the biggest fan of this cake that really just tastes like a sponge cake soaked to the brim with rum. But my alcoholic friends with good alcohol tolerance really swear by this baby.

I'm quite certain. These must be photos from two separate occasions lumped together. It's not possible that we were able to scruff down ALL THAT FOOD. O_O Or did we?

Whatever the case, Barracks @ Dempsey is definitely one of my favorite brunch places to go to in the entire SG. There are only a number of drawbacks and these are probably the main reasons why I've only gone about twice in the past year or so:

1. It's hard to get to this place without a car. That's the way Dempsey is built. -_- Which is annoying but it's part of the nature of that place - an enclave with tons of awesome, mostly expensive restaurants that, if it were more accessible, would definitely be overrun by people at nights and on weekends, making the experience not so enjoyable. 
2. It's kinda...pricey. But that's the case with most Dempsey restaurants. I'd say, give this place a shot and you won't regret it though. Save up for a few weeks or go there when you decide you want a treat. 

In a nutshell, it's perfect for

- first dates (thumbs up to any guy who brings a girl for brunch here!! :D)
- a date with close friends 
- a morning/afternoon/night of indulgence
- reminding yourself of the sheer JOY that GOOD FOOD can bring

To end off the post, here's a shot of the mug my friend had bought for me from her trip to China. Very loosely translated from Chinese, it means, "EAT WELL, SLEEP EVERYDAY". :) I can't think of a better motto for life, eh?

Recently it seems that my blog has morphed more into a food blog with occasional outfit shot posts... I'd really initially envisioned it to cover more topics that these two ;p but most of the time when I do get to go out/enjoy some free time, the only things that are picture-worthy are when I go out for meals. Hence all the food shots. Asian-style. 

I do want to share more things like clothing collections from my favorite labels/designers...or photos of interiors that are gorgeous and inspirational...or more things related to design... but those things do take time to put together. And unfortunately, I guess work/studies are always going to have to take the upperhand when it comes to deciding what to with my free time. I'm hoping it won't be that way after I graduate though. We'll see. 

But in the meantime, I shall get back to editing more of my travel photos. AND, another thing I shall start doing a little more of is sharing some of my favorite quotes. Today I just realized how incredibly touching Winnie the Pooh quotes can be! A. A. Milne, the author, writes in a way that is so simple and perfect for kids, yet pregnant with meaning that probably only older children/adults can decipher. Just happened to read some quotes online today and here's one for the road:
